Piscolliís Killer Southwest Crappie Tacos

10 to 12 Crappie fillets
1 pack yellow cornmeal
3 teaspoons pepper
1 large freezer bag
Vegetable oil
1 pack small corn tortillas
1 red onion
1 cup cilantro
1 pack cut white cabbage (slaw mix works too)
1 Wishbone Creamy Caesar Dressing
AZ Gunslinger or Frankís Red Hot Sauce
Rice and bean

Pre-heat oil in a deep fryer or pan to 350
Cut fillet into long strips, then cut in half
Fill freezer bag about ľ full with yellow cornmeal and add pepper
Seal and shake bag to mix
Put cut fish in the freeze bag, seal and shake until covered with cornmeal mix
Fry fish to a golden yellow color
While fish is cooking cut onion and cilantro
Put a couple warm tortillas on a plate, then out a couple pieces of the cooked fish
Cover with chopped cabbage, onion and cilantro
Top with the creamy Caesar and hot sauce
Rice and beans on the side

You should get together with Johnny Johnson and do an hour long special......Fishing with Johnny Johnson & Cooking with Piscolli!!
